Pats risotto

Servings: 2-3 Hungry people / 4-5 Normal people

1 large onion
1 cup Arborio rice
16 Mushrooms
2 Tbsp Butter
1 cup Parmesan
1 qt Chicken stock
4 cups Spinach
2 cups Broccoli
8 small Tomato
1 cup Italian Parsley
1 large Chicken breast
1 Tbsp black pepper
1 Lemon juiced
Basil handful
2 Tbsp olive oil
1/2 cup Water

Directions: Begin by placing the 2 Tbsp of butter into a large pot. Place on medium heat and continue at that temperature. Then add the diced onion. These will begin to cook down until translucent and be sure the onions do not burn. Then add all of the arborio rice, you want the rice to sear. Add half of the chicken stock, the liquid will take about 20 minutes to cook down continue to slowly add chicken stock and stir. Be sure to check risotto to ensure it is cooked properly.
